If you know anything about infrared burners, you know they bring the heat to your grilling experience. In fact, they can obtain surface grilling temps of over 900 degrees Fahrenheit. Infrared heat cooks the food directly, while traditional burners heat the air, which then heats the food. Of course, direct and scorching heat speeds up cooking times. However, infrared burners are much more than time-savers.
